Use a knife to score deep cross-hatch cuts into the fruit, then scoop out the cubes with a spoon. Transfer all of the mango pieces into a blender. Add a generous pour of sweetened condensed milk and squeeze in the juice of one lemon and one lime. The lemon and lime are optional, but add great balance and bring out the flavor of the mango.Pour in cold water—just enough to help everything blend smoothly—then blend until the mixture is smooth. If the base is not sweet enough for your liking, add sugar or a sweetener of your choice.To assemble, fill a tall glass with plenty of ice, then pour the mango base over the top until the glass is about three-quarters full. Top it off with water or a sparkling water/soda of your choice, I used a pineapple mango sparkling water.If you like a little kick, sprinkle tajín or a pinch of cayenne pepper on top for some heat.
