Set them into a smoker or oven at 275°F and let them cook gently. You can skip this step and throw them straight onto the grill.While those cook, slice your beef bacon into tiny strips and drop it into a cold pan. Turn the heat to medium-low and let it slowly render. After a few minutes, slide in finely diced onion. Add a crack of black pepper and let everything cook down together until the bacon crisps and the onions soften and start to caramelize.Once you see those crispy edges forming, deglaze with Worcestershire sauce and just a couple drops of apple cider vinegar.
