CHICKEN PARM SANDWICH Apr 20 Written By Summer Ahmed https://www.youtube.com/shorts/5-DkpM01sN8PrintWith ImageWithout ImageCHICKEN PARM SANDWICH Yield 4Prep time10 MinCook time20 MinTotal time30 Min Ingredients 2 lbs chicken breast, sliced & pounded1 cup flouregg wash: 2 eggs,1/4 cup water2 cups Italian style bread crumbs16oz fresh mozzarella2 cups of your favorite marinara2 large sub style bread rolls (hoagie, or baguette)Pesto:2 cups fresh basil1/3 cup pine nuts1 oz Parmesan cheese, grated3 cloves garlic1/4 cup good olive oilsalt to tastePink Cream Sauce:2 tbsp butter2 gloves garlic, grated2 tbsp tomato paste1 cup heavy creamsalt to tasteInstructionsStart by slicing your chicken breasts thin, then pound them out evenly so they cook fast and stay tender.Set up your stations: flour, egg wash (2 eggs + a splash of water), and Italian-style breadcrumbs. Dredge each piece in flour, then egg, then breadcrumbs, pressing the coating on so it sticks.Heat a pan with good olive oil over medium-high. Drop the chicken in away from you and let it cook undisturbed for about 2 minutes. Flip and cook until golden brown and crisp on both sides. Pull them out and hit with a light sprinkle of flaky salt while hot.For the pesto, blend fresh basil, pine nuts, garlic, olive oil, and freshly grated Parmesan until smooth and vibrant.Take each cutlet, spoon over a little marinara, then top with fresh mozzarella and grated Parmesan. Slide into a 400°F oven until the cheese melts and bubbles.While that finishes, make the pink sauce. Melt butter in a pan, grate in garlic, then add tomato paste and let it cook slightly.
