Gently peel away the outer layer and the inner membrane.Cut the onion in half and separate it into rings. Drop them into a bowl and pour over enough buttermilk to fully submerge.Add a splash of hot sauce, then season the mixture with half of your garlic powder, smoked paprika, and chipotle chili powder. Gently mix everything together, making sure the onions are coated without breaking any rings. Let them soak for at least 15 minutes.In a separate bowl, combine all-purpose flour with cornstarch — about one-third of the total should be cornstarch for that extra crunch. Season this dry mix with the second half of your seasoning blend: garlic powder, smoked paprika, and chipotle chili powder.Lift your onion rings from the buttermilk and let the excess drip off.
