Pat the thighs dry with a paper towel then season them all over on both sides with kosher salt. In a small bowl whisk together the flour, cornstarch, baking powder, chili powder, onion powder, garlic powder and smoked paprika. Sprinkle the seasoned flour all over each chicken thigh on both sides, patting the seasoning into the skin and backs of the thigh to make sure it's covered entirely. Flip all the chicken so the skin side is down on the rack and spray the thighs liberally with cooking spray. Place the chicken thighs into your air fryer basket skin side up, then spray once more to coat that other side with oil. (Note, I did not preheat my airfryer).Set your air fryer to 375 F and cook for 22-25 minutes depending on your airfryer strength. While the chicken cooks, stir together the sauce in a small bowl and set aside. Serve your air fried chicken with the buffalo dipping sauce, or slice and place into your favorite meal prep application like a rice bowl or hearty salad.
