CARMALIZED ONION SPINACH DIP May 6 Written By Eleanor Debel https://www.youtube.com/shorts/Ie7qy52v4pEPrintCARAMELIZED ONION SPINACH DIPYield 6Prep time15 MinCook time1 H & 10 MTotal time1 H & 25 MIngredients4 large onions, halved and thinly sliced 1 tbsp olive oil Kosher salt to taste 3 Tbsp butter6 cups baby spinach 3 Tbsp minced garlic1 tsp red pepper flakes 8 oz (1 cup) softened cream cheese 8 oz (1 cup) sour cream16 oz (2 cup) shredded cheese (I used a blend of mozzarella and cheddar but use whatever you prefer) InstructionsHeat a large skillet over medium heat and add the olive oil and sliced onions. Season with a pinch of salt and stir occasionally until the onion starts to release some liquid and sizzle, about 2 minutes. Reduce the heat to medium low and let cook for 1 hour, stirring often, until the onions have caramelized and considerably shrunken in volume. You should be left with about 1 cup of soft, deep brown caramelized onions. While the onions are caramelizing, start the dip: in another large, oven safe skillet, add the butter and let melt over medium high heat. Add the spinach (in batches if you need the space) to the pan and let cook down until fully wilted and soft, adding more spinach as you go if need be. Reduce the heat on the pan to medium, then stir in the minced garlic and red pepper flakes to the spinach. Add the cream cheese and sour cream and stir until you have a nice thick sauce with the spinach mixed in. Stir in 1 cup of the shredded cheese and let cook until all the cheese is melted, about 2-3 minutes. Remove the pan from the heat and stir in the caramelized onions until everything is nicely combined. Sprinkle the remaining 1 cup of shredded cheese over the dip and broil on high for 1-2 minutes, until the cheese is melted, bubbling and the top of the skillet is golden brown. Serve with chips, crackers or veggies and let cool for 5 minutes before digging in. Enjoy!
