HEALTHY LOADED CHEESE AND BEEF FRIES Apr 8 Written By Eleanor Debel https://www.youtube.com/shorts/4_AlVT9FsLwPrintHEALTHY LOADED BEEF AND CHEESE FRIESYield 4Prep time15 MinCook time30 MinTotal time45 MinIngredientsFor the Fries:4-5 large russet potatoes Avocado oil spray 1 Tbsp sweet heat rub or spice blend of choice For the Beef:1 lb lean ground beef 1 small onion, finely diced 1 bell pepper, finely diced 1 jalapeno, finely diced 3-4 Tbsp taco seasoning ½ cup vegetable broth or water For the Cheese Sauce:1 cup low fat cottage cheese ¼ cup shredded sharp cheddar 1 Tbsp nacho cheese seasoning (optional) ⅓ cup vegetable broth or water 1 Tbsp sazon InstructionsPreheat your oven to 400 F and lightly spray a sheet tray with avocado oil cooking spray. Place it into the oven while it preheats to get nice and hot before you add the potatoes. Peel and dice the potatoes into 1 inch cubes. Add to a large bowl and toss with avocado oil and seasoning until evenly coated. Remove the preheated sheet tray from the oven and add the seasoned potatoes, spread them out into an even layer and put back in the oven to bake for 25-30 minutes, flipping them half way through, until nice and golden brown.While the potatoes cook make the beef: heat a large skillet over medium high heat and add a light spray of oil. Add the beef to the pan and break all of it up with a spatula or wooden spoon so it’s evenly spread out on the pan. Cook, stirring frequently until the meat just starts to brown and release moisture, then stir in the diced onion, peppers and jalapeno. Continue to cook until the vegetables have softened and everything is browning, about 5 minutes, then stir in the taco seasoning and broth or water. Cook for another 2-3 minutes so that the meat is saucy and the liquid is slightly reduced, then remove from the heat and set aside. To make the cheese sauce: Combine the cottage cheese, sharp cheddar, broth, optional nacho seasoning and sazon in a blender and blend on high until smooth. Transfer to a small pot and heat on low or medium low heat just until warmed and thickened. Remove from the heat and cover until ready to use. Assemble your fries: Load up a plate or bowl with crispy potatoes, then top with spoonfuls of your taco meat, and drizzle the cheese sauce over top.
