Season with cayenne, oregano, chili powder, paprika, black pepper, and salt. Mix until evenly coated, cover, and let it rest in the fridge for a couple of hours.For the queso, melt butter in a pan over medium heat. Add an equal amount of flour and whisk to form a roux.
