Slice the tops off of the jalapeños and use a small spoon to scoop out the seeds. Slice the cleaned jalapeños as thinly as possible. Then, take the white onion and slice it thinly across the grain (cutting against the natural lines in the onion).Place the sliced jalapeños and onions into a mixing bowl and toss them together until evenly combined. Set aside.Take the ground beef and divide it into 4 oz portions.Preheat a skillet or griddle to high heat until it is very hot. Once the pan is hot, place one of the beef balls in the center. Immediately top it with a small handful of the jalapeño-onion mixture.Place a square of parchment paper over the patty, then use a burger press or heavy spatula to smash it down firmly until it’s about ¼-inch thick. Remove the parchment and let the patty sear.Season the patty generously with an all-purpose seasoning blend while it cooks. Once the edges start to look crispy and the bottom releases cleanly from the pan, flip the patty.Immediately place a slice of American cheese over the top. Let the cheese fully melt, then remove the patty from the heat.While the patties are resting for a moment, slice the brioche buns in half and toast them cut-side down in the same pan until golden brown and crisp.To assemble: spread a generous layer of classic burger sauce on the bottom bun. Top with a layer of sliced pickles, followed by two cooked patties with cheese. Add a slice of tomato, sprinkle with a pinch of salt, and finish with the top bun.
